Cabbage & Carrot Kraut, 3/12/2014

Shredded the cabbage on the mandoline and the carrots in the Cuisinart. Weighed the salt in the crock on the scale, in increments, adding 20 g salt to each kg of vegetables. Had 3.2 kg after peeling and trimming (the above weights are before prep). (more…)
