An early birthday present to myself arrived yesterday: a 240mm Wa-Gyuto, along with a 1000/6000 grit sharpening stone and a diamond flattening plate, from Japanese Knife Imports. It’s the nicest knife I’ve owned. My go-to knife was a Wusthof Classic chef’s knife until I discovered Nicole’s Shun chef’s knife and took a liking to its thin blade and bolsterless design. At some point I got it in my mind to research a new knife and spent a few hours perusing, a site with detailed reviews of dozens of knives and lots of information on Japanese knives. (more…)
